- 2 tsp. vegetable oil
- 1 lb. lean ground beef
- salt and pepper
- 1 medium yellow onion (diced finely)
- 2 cloves garlic (minced)
- 4 cups chopped green cabbage
- 2 medium carrots (quartered and sliced)
- 4 cups low-sodium beef broth
- 3 (8 oz.) cans tomato sauce
- 1/2 cup white rice (uncooked)
- 1 bay leaf
- 3 tbsp. light brown sugar
- 2 tbsp. fresh chopped parsley
Instructions
- In a large pot, heat vegetable oil over medium-high heat. Add lean ground beef, season with salt and pepper, and cook until browned.
- Add diced yellow onion and minced garlic; sauté for 2–3 minutes until tender.
- Stir in chopped cabbage and sliced carrots. Pour in tomato sauce and beef broth. Add uncooked rice, bay leaf, and light brown sugar; mix well.
- Bring to a simmer over medium heat, then reduce to low and let cook for about 25 minutes until rice is tender.
- Remove the bay leaf before serving and garnish with freshly chopped parsley.
