  • 1 cup salted butter
  • 1 cup milk
  • 1¼ cups golden raisins
  • 1¼ cups raisins
  • ¾ cup dried pitted dates
  • ½ cup currants
  • 1 cup candied orange or lemon peel
  • 1⅓ cups walnuts
  • 2 cups all-purpose flour
  • tsps pumpkin pie spice
  • ¾ tsp baking soda
  • ¾ cup golden syrup or light corn syrup
  • 2 extra-large eggs
  • 5 tbsps apple juice

Instructions

  1. Preheat your oven to 300°F (150°C) and line a 9-inch round cake tin with parchment paper.
  2. In a large saucepan, combine milk, golden syrup, butter, dates, golden raisins, raisins, currants, and candied peel. Heat gently until the butter melts; let cool.
  3. In another bowl, sift together flour, pumpkin pie spice, and baking soda; fold in chopped walnuts.
  4. Once the fruit mixture cools, beat in eggs one at a time and gradually fold in dry ingredients until just combined.
  5. Spoon batter into the prepared tin and bake for about 2 to 2½ hours or until a skewer comes out clean.
  6. While warm, poke holes in the top and drizzle with apple juice to soak in as it cools completely in the tin.
  7. Wrap tightly once cooled and 'feed' with apple juice every few days for enhanced flavor.
