  • 1 lb. Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided
  • Salt and pepper to taste
  • Optional: Garlic bread, Texas toast, or garlic knots

Instructions

  1. Pound chicken breasts to an even thickness of about 1/4 inch.
  2. Rub them with olive oil and season liberally on both sides with 2-3 tablespoons of blackened seasoning.
  3. Heat a skillet over medium-high heat.
  4. Add 2 tablespoons of olive oil and cook the chicken for 3-4 minutes until dark amber on one side.
  5. Flip the chicken only once; reduce heat to low.
  6. Add 2 tablespoons of butter and 2 teaspoons of minced garlic into the skillet. Allow it to melt into the chicken as it finishes cooking for about 5-6 minutes until it reaches an internal temperature of 165 degrees.
  7. Remove chicken from skillet and place it on a plate covered loosely with foil to rest.
  8. In the same skillet over medium heat, add remaining butter until melted.
  9. Add remaining minced garlic and sauté for 1-2 minutes until fragrant.
  10. Stir in heavy cream along with 2-3 teaspoons of blackened seasoning; bring to a low boil while simmering for about 5 minutes until thickened.
  11. While sauce simmers, cook noodles according to package instructions until al dente; reserve 1/3 cup of pasta water before draining.
  12. Stir parmesan cheese into alfredo sauce until melted; taste and adjust seasonings as needed.
  13. Incorporate reserved pasta water into sauce; mix well before adding cooked noodles.
  14. Top with sliced chicken and sprinkle additional cajun seasoning before serving.
