- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 3/4 cup cold unsalted butter
- 1/4 cup shortening
- 1/4 cup ice water
- 12 ounces fresh blackberries
- 1/2 cup sugar
- 2 tsp Instant Clearjel thickener
- Juice of 1/2 lemon
- 1 cup confectioner’s sugar, sifted
- Water for thinning
Instructions
- Prepare the crust by pulsing flour and salt in a food processor. Add butter and shortening; pulse until grainy.
- Gradually add ice water until dough comes together. Shape into a ball, wrap in plastic, and refrigerate for at least 2 hours.
- For the filling, cook blackberries with sugar and lemon juice until softened.
- Preheat oven to 350°F. Roll out dough into a rectangle and place half in a baking sheet.
- Spread blackberry filling over the crust, cover with remaining dough, seal edges, and bake for about 40 minutes or until golden brown.
- Allow cooling before glazing with confectioner’s sugar mixed with water.
