  • 1 teaspoon baking soda
  • 1 & 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
  2. If using nuts, toast them on a baking sheet for about 5–7 minutes until fragrant.
  3. In a large bowl, beat the softened butter until smooth. Add the brown and granulated sugars; cream together until fluffy.
  4. Beat in the eggs until well combined.
  5. Mash the ripe bananas and stir into the butter mixture.
  6. In another bowl, combine all-purpose flour, oat flour, baking soda, baking powder, and salt.
  7. Gradually mix dry ingredients into wet ingredients until just combined. Avoid overmixing.
  8. Gently fold in sour cream and toasted nuts if desired.
  9. Pour batter into the prepared pan and smooth the top.
  10. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
