Ingredients
- 1/2 cup softened butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe bananas (about 2 and 1/2 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats (blended into flour)
- 1 teaspoon baking soda
- 1 & 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1/2 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
- If using nuts, toast them on a baking sheet for about 5–7 minutes until fragrant.
- In a large bowl, beat the softened butter until smooth. Add the brown and granulated sugars; cream together until fluffy.
- Beat in the eggs until well combined.
- Mash the ripe bananas and stir into the butter mixture.
- In another bowl, combine all-purpose flour, oat flour, baking soda, baking powder, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined. Avoid overmixing.
- Gently fold in sour cream and toasted nuts if desired.
- Pour batter into the prepared pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for at least 20 minutes before slicing.
