- 1/2 cup butter (softened)
- 1/2 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mashed ripe banana (about 2 and 1/2 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old fashioned oats (blended into a powder)
- 1 teaspoon baking soda
- 1 & 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1/2 cup sour cream
- Optional: toasted pecans or walnuts, spices (cinnamon, nutmeg, cloves)
Instructions
- Preheat your oven to 350°F and prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
- Toast the nuts on a baking sheet for about 5–7 minutes until fragrant; set aside.
- In a mixing bowl or stand mixer, beat softened butter until smooth. Add both sugars and cream together until fluffy.
- Incorporate eggs and vanilla extract; mix thoroughly.
- Mash the ripe bananas and blend them into the batter.
- Combine flour and oat powder without stirring yet. Mix in baking soda, baking powder, and salt separately before adding to the wet mixture.
- Gently fold in sour cream and nuts if using.
- Pour batter into the loaf pan, smoothing out the top.
- Bake for about 55–65 minutes or until a toothpick comes out clean.
- Cool for at least 20 minutes before slicing.
