Ingredients
- 1/2 cup softened butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe banana (about 2.5 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats (blended into powder)
- 1 teaspoon baking soda
- 1 & 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1/2 cup sour cream
- Optional: Nuts, cinnamon, nutmeg, cloves
Instructions
- Preheat the oven to 350°F and prepare a loaf pan with nonstick spray or parchment paper.
- If using nuts, toast them on a baking sheet for about 5–7 minutes until fragrant.
- In a mixing bowl or stand mixer, cream together softened butter and sugars until fluffy.
- Beat in the eggs and mashed bananas until well combined.
- In a separate bowl, mix the dry ingredients: flour, blended oats, baking soda, baking powder, and salt.
- Gradually combine dry ingredients with the wet mixture without overmixing.
- Fold in the sour cream and nuts if desired.
- Pour the batter into the prepared loaf pan and bake for 55–65 minutes until a toothpick comes out clean.
- Allow cooling before slicing.
