Ingredients
- 3 medium beets, roasted and finely chopped
- 8 oz goat cheese, softened
- 1 tbsp chopped fresh dill or chives
Instructions
- Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet.
- Roast for 45-60 minutes until tender when pierced with a fork. Let them cool before peeling and chopping.
- In a mixing bowl, combine the roasted beets with softened goat cheese and herbs until creamy.
- Place plastic wrap on the countertop and spoon the beet mixture onto it. Roll tightly into a log shape.
- Wrap completely in plastic wrap and refrigerate for at least 2 hours until firm.
- Unwrap before serving, slicing it into rounds or serving whole with crackers or vegetables.
