- 1 pound beef tenderloin
- ½ onion (minced)
- 2 cups button mushrooms (finely chopped)
- ½ cup pitted black olives
- 1 pound puff pastry
- Mustard (to taste)
- 1 egg (beaten)
Instructions
- Cut beef into 1-inch pieces and season with salt and pepper. Heat olive oil in a frying pan over high heat and brown the beef for about 1-2 minutes per batch. Set aside.
- Sauté minced onion and mushrooms in the same pan until soft. Add soy sauce, oregano, and black pepper; stir to combine.
- Transfer the mixture to a food processor, add olives, and process until smooth.
- Roll out puff pastry and cut into squares. Place mustard and mushroom mixture on each square, top with beef, fold corners to seal, and brush with beaten egg.
- Bake at 400°F (200°C) for 10-15 minutes or until golden brown.
