Ingredients
- ⅓ cup olive oil
- 2 cloves of garlic
- 1–2 chillies
- Juice and zest of 1 lemon
- 8 large prawns (prepared with shells on, vein removed)
- Fresh parsley for garnish
Instructions
- Prepare the BBQ by lighting firelighters and adding charcoal until hot.
- In a pan, heat olive oil and sauté minced garlic and sliced chillies for about 2 minutes. Add lemon zest and juice.
- Marinate the prawns in half of the garlic-lemon mixture for at least 15 minutes.
- Ensure coals are white hot before grilling.
- Grill prawns for about 45 seconds to 1 minute per side until they turn pink and opaque.
- Serve immediately topped with remaining sauce and fresh parsley.
