Ingredients
- 30.5 ounces French Vanilla cake mix (two boxes)
- 6 eggs
- 2 cups water
- 1 cup oil
- 2 cups toasted coconut (reserve a bit for topping)
- 3.4 ounces Instant Banana Pudding
- 2 cups whole milk
- 1 can sweetened condensed milk
- 8 ounces cream cheese (softened)
- 8 ounces Cool Whip (thawed)
- 6 cups powdered sugar
- 3 teaspoons pure vanilla extract
- 5–7 tablespoons heavy whipping cream
Instructions
- Preheat your oven to 350°F (175°C) and prepare three round cake pans with baking spray.
- In a large mixing bowl, combine the French Vanilla cake mix, eggs, water, and oil. Mix until smooth using an electric mixer.
- Divide the batter among the prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely in the pans.
- Once cooled, level the tops of each layer with a cake leveler for even stacking.
- Assemble by layering the cakes with banana pudding filling and frosting between each layer.
