  • ½ cup canola oil
  • ½ cup milk
  • ½ cup caster sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a loaf tin with baking paper.
  2. In a mixing bowl, mash the overripe bananas until smooth. Add the canola oil, milk, both sugars, eggs, and vanilla extract. Mix until well combined.
  3. Sift in the flour, baking powder, and salt; stir gently until just combined.
  4. Pour the batter into the prepared loaf tin and bake for about 45–55 minutes, or until golden brown and a skewer comes out clean.
  5. Allow cooling in the tin for 10 minutes before transferring to a wire rack.
