- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups plain flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a loaf tin with baking paper.
- In a mixing bowl, mash the overripe bananas until smooth. Add the canola oil, milk, both sugars, eggs, and vanilla extract. Mix until well combined.
- Sift in the flour, baking powder, and salt; stir gently until just combined.
- Pour the batter into the prepared loaf tin and bake for about 45–55 minutes, or until golden brown and a skewer comes out clean.
- Allow cooling in the tin for 10 minutes before transferring to a wire rack.
