- 3 ripe bananas (mashed)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 2 large eggs
- ½ cup unsalted butter (softened)
- 1 tsp vanilla extract
- 8 oz cream cheese (softened)
- 2 cups powdered sugar
- ½ tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, mash the bananas and mix in sugar and softened butter until creamy. Add eggs and vanilla, blending until smooth.
- Gradually incorporate the dry ingredients into the wet mixture using a rubber spatula until just combined.
- Pour the batter into the prepared loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
- While the cake cools, prepare the frosting by beating softened cream cheese and gradually adding powdered sugar until smooth.
- Once cooled completely, frost the cake generously before slicing.
