- 1/2 cup butter
- ¾ cup sugar
- ½ cup sour cream
- 1 egg
- 1 cup mashed ripe bananas (about 2 bananas)
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp salt
- 2 cups powdered sugar
- 1½ tbsp milk
Instructions
- Preheat your oven to 375°F (190°C) and line an 8×8 baking dish with parchment paper.
- In a mixing bowl, beat together butter, sugar, sour cream, and egg until creamy. Add mashed bananas and vanilla extract; mix well.
- Gradually add flour, baking soda, and salt to the banana mixture. Stir gently until just combined.
- Pour batter into the prepared baking dish and bake for 20-25 minutes or until golden brown. Let cool slightly before removing from the pan.
- For the icing, melt butter in a saucepan over medium heat until browned; pour into a bowl and whisk in powdered sugar and vanilla extract until smooth.
- Spread the icing over the warm bars for a deliciously melty finish.
