- 3 oz dark chocolate bar, chopped
Instructions
- In a medium bowl, whisk together all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch; set aside.
- Using a stand mixer with the paddle attachment, cream the butter until smooth. Gradually add granulated and brown sugars and beat until fluffy (about 2–3 minutes).
- Incorporate one large egg, one egg yolk, and vanilla extract until well blended.
- Gradually mix in the dry ingredients on low speed until just combined—avoid overmixing.
- Gently fold in all chocolate chips using a spatula.
- Chill the dough for at least one hour or up to 24 hours for optimal flavor.
- Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper.
- Scoop large dough balls (about ⅓ cup each) onto the prepared sheet about three inches apart.
- Bake for 15–18 minutes until edges are set but centers appear slightly underbaked.
