- 4 cod fillets (6 oz each)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- Lemon-Dill Sauce: 1/3 cup plain Greek yogurt or sour cream
- 2 tablespoons mayonnaise (optional, for a creamier texture)
- 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
- 1 teaspoon Dijon mustard
- 1 small garlic clove, minced (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the cod fillets dry and brush both sides with olive oil; season with salt, pepper, and garlic powder.
- Place seasoned fillets on the baking sheet and bake for 12–15 minutes until flaky (145°F internal temperature).
- In a mixing bowl, whisk together Greek yogurt, optional mayonnaise, dill, lemon juice, zest, Dijon mustard, and garlic; season to taste.
- Chill the sauce in the refrigerator until serving.
- Plate the baked cod and drizzle or serve the sauce on the side; garnish with fresh dill and lemon slices.
