- 1 1/3 cup salsa
- 1 tablespoon chili powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6 taco-sized flour tortillas
- 3 tablespoons butter (melted)
- 2 teaspoon coriander (optional)
- 6 green onions (chopped)
- 2–3 jalapeños (diced)
Instructions
- Preheat your oven to 400°F.
- In a mixing bowl, combine shredded chicken, refried beans, salsa, cheese, and spices until well mixed.
- Lay tortillas flat and spoon filling into the center; fold sides and roll tightly.
- Place seam-side down on a baking sheet, brush with melted butter, and bake for 15 minutes.
- Flip chimichangas and bake for an additional 10 minutes until golden brown.
