Ingredients
- 2 soft-boiled eggs
- 1 small avocado, sliced
- 1 cup mixed greens (romaine, baby kale, butter lettuce)
- 1 cup shredded cooked chicken
- 56 cherry tomatoes (roasted or fresh)
- Salt & black pepper, to taste
- Optional: Balsamic glaze or olive oil
Instructions
- Boil the eggs for 7 minutes in a pot of boiling water. Transfer to an ice bath for 2 minutes before peeling.
- In a mixing bowl, layer the mixed greens first, followed by shredded chicken and roasted cherry tomatoes.
- Top with sliced avocado and halved jammy eggs.
- Season with salt and pepper; drizzle with balsamic glaze or olive oil if desired.
