Ingredients
- 2 soft- or medium-boiled eggs
- 1 avocado, sliced
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes
- 1 cup broccoli florets
- 1 tsp olive oil
- 1 tsp everything bagel seasoning
- Salt & pepper to taste
Instructions
- Boil the Eggs: Bring water to a boil in a pot. Gently add eggs and cook for 7-8 minutes for a jammy center. Cool under cold water, peel, and slice in half.
- Sauté the Veggies: Heat olive oil in a skillet over medium heat. Sauté sliced mushrooms for 4-5 minutes until browned. Add broccoli florets and cook until tender; set aside. In the same pan, blister cherry tomatoes for 2-3 minutes until softened.
- Assemble the Bowl: On a plate or bowl, arrange sliced avocado, sautéed mushrooms, broccoli florets, blistered tomatoes, and halved eggs.
- Season & Serve: Sprinkle everything bagel seasoning over the top and add salt and pepper to taste before serving warm.
