  • 1 cup chopped toasted pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, combine flour, cinnamon, nutmeg, salt, and baking powder.
  3. In a large bowl, whisk together eggs, sugar, vegetable oil, applesauce, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mix until just incorporated. Gently fold in chopped apples and half of the pecans.
  5. Pour the batter into the prepared loaf pan. Mix remaining pecans with sugar and cinnamon; sprinkle over the top.
  6. Bake for 55-60 minutes or until a toothpick inserted comes out clean. Allow to cool before slicing.
